Preparing the berries

Dogwood must be sorted and washed before use. When sorting, rotten specimens are rejected and the stalk is also removed. To make whole fruit jam, it is better to take moderately ripe berries, and send slightly overripe ones for grinding with sugar. It is better not to use unripe dogwood, otherwise the finished dish will turn out to be too sour. Such fruits can be placed separately in a paper bag, and after a few days the berries will ripen.

In order for the dogwood to quickly absorb the sugar syrup and give up its juice to the jam, the berries are pierced with a toothpick. If there are a lot of berries, then resourceful housewives use a homemade device. Small nails are stuffed onto a flat board measuring approximately 10 x 10 centimeters.One nail is located approximately 1-1.5 square centimeters. The result is a kind of prickly comb. Place dogwood berries on a flat plate and begin to prick them onto a “comb.” After this, the damaged fruits are removed and transferred to a cooking container.

Dogwood (1 kilogram) is pierced and placed in boiling syrup prepared from 200 milliliters of water and 1200 grams of sugar. After the jam begins to boil, turn off the fire. After the last heating, the jam is boiled for no more than 2 minutes and immediately poured into sterilized containers.

A quick method with seeds

Dogwood jam can be prepared relatively quickly using a different technology. A kilogram of berries is poured with boiling sweet syrup. To prepare it, 1.5 kilograms of sugar are dissolved in a glass of water.

Dogwood is infused in a sweet base for 8-10 hours and then put on fire. Boil the jam for 10 minutes and pour into containers.

This jam turns out to be quite liquid, but the cooking process saves a lot of time.

Berries (2 kilograms) are peeled and sprinkled with sugar.You need 2.5 kilograms of sand. It is best to add dogwood in layers, this will make it easier to mix. There is no need to mix the fruits vigorously. The main thing is that they are completely enveloped in sugar.

The candied dogwood is left for several hours to allow the berries to release their juice. It is best to leave them overnight, as the fruits are reluctant to share their juice.

After juice appears at the bottom of the pan, put it on the fire. Heat should be minimal so that the sugar dissolves slowly. The jam is constantly stirred, and after the crystals are completely dissolved, they are placed in jars.

A kilogram of seeded dogwood is passed through a meat grinder. It is better to use a mesh with large holes. This will make twisting the berries much easier.

The rolled berries are sprinkled with sugar. You will need 1.2 kilograms of it. The jam is mixed and a stove is placed, the heating of which is set to the minimum level.

Cook the mixture for 3 minutes after boiling. After the jam has cooled completely, the three-minute cooking is repeated, and the finished dessert is immediately transferred into jars for rolling.

You can preserve the healing properties of berries as much as possible by preparing “live” jam. To do this, prepared dogwood (any quantity), freed from seeds, is ground through a meat grinder or chopped with a blender. Sugar is added according to your own taste. The average ratio of sugar to dogwood is 1:1. If the sourish taste of the jam confuses you, then add a little more sweetener.

The preliminary preparation of apples is simple: the fruits are washed, freed from seeds and cut into arbitrary slices. It is best that the size of the apple pieces is approximately twice the size of a dogwood berry. Dogwood can be cooked with or without seeds.

The prepared ingredients are cooked separately from each other. To do this, pour a kilogram of dogwood fruits with ½ part of boiling syrup. The syrup is prepared from 3 kilograms of sugar and 500 milliliters of water. The berries are boiled for 2-3 minutes and left to infuse. Do not cover the pan with a lid.

Pour the second part of the syrup into sliced ​​apples (1 kilogram) and boil it over medium heat for 5 minutes. After keeping the jam under a clean towel for 8-10 hours, continue cooking the dessert.

Combine the apples with the dogwood and, stirring gently, heat (boil) over the fire for another 5 minutes.

Boiling apple-dogwood jam is placed in jars and covered with lids.

In a slow cooker

Dogwood dessert can also be prepared in a slow cooker. To do this, use the “Stew” or “Soup” program. Place berries (3 cups) on the bottom of the bowl, immediately add sugar (3 cups) and 200 milliliters of water. The products are lightly mixed and the unit is set to the appropriate cooking mode. The lid is not closed.

After half an hour, the dogwood jam is ready. To ensure that the fruits cook more evenly, the jam is stirred a couple of times during the cooking process.

How to store dogwood jam

Winter preparation of sour berries is perfectly stored all winter in a dark, cool room or in the refrigerator. The exception is “live” dogwood jam.It can be stored in the main compartment of the refrigerator for no more than 3 months. Another option is freezing. The workpiece is laid out in small plastic containers and sent out into the cold. In this form, jam can be stored from 1 to 1.5 years.
