How to prepare cloudberries for making jam

After harvesting, the fruits are carefully sorted and washed in plenty of cool water. Many people do not wash cloudberries, justifying this by picking berries in environmentally friendly places, but only sorting them out from garbage and rotten berries. The right to choose in this matter is only yours.

If you still choose the option of pre-washing the berries, especially those purchased on the market, then do this in a large saucepan with cool water. Then the cloudberries are thrown into a colander or sieve, and the fruits are allowed to dry thoroughly. Some resort to drying the berries with paper or cotton towels, laying them out on a flat surface in one layer.

If the jam is made from frozen fruits, then no pre-treatment is required. Jam is made from frozen berries without defrosting them.

How to make cloudberry jam

Jam with whole berries

Main ingredients: cloudberries - 1 kilogram, sugar - 1.2 kilograms, water (preferably purified or bottled) - 1.5 cups.

The first stage is boiling the syrup. Sugar is mixed with water and the mixture is boiled after boiling for 5 minutes.

Next, place the prepared berries into the hot base and mix the mass very carefully. The best option is to completely abandon spoons and spatulas, and use shaking the cooking container to mix the berries in the syrup.

After boiling, cook the jam for 20 minutes. During this time, you need to stir the jam at least 5 times.

Five minutes of cloudberries

A kilogram of berries is poured into boiling syrup (1 glass of water and 1 kilogram of sugar). Boil the jam for exactly 5 minutes, and then set the bowl of cloudberry jam aside until it cools completely. During this time, the berries will be saturated with syrup and give up their juice to it.

During the next cooking, the mass is boiled for another 5 minutes, and then the jam is immediately poured into jars.

In the oven with powdered sugar

A kilogram of fruit is laid out in one or two layers in a wide heat-resistant dish. A rectangular baking dish works well for this. Half a kilo of powdered sugar is sprinkled thickly over the cloudberries. The candied berries are placed in an oven preheated to 180-200 degrees. Heat treatment time 20 minutes. After this, the mold is removed and the berries are mixed with a wooden spatula. Another 5 minutes in the oven, and the jam is packaged in jars.

Cloudberries (500 grams) are placed in boiling water (150 milliliters) and slightly simmered. Literally 5 minutes. Then the berries are thrown onto a sieve and ground, freeing them from the seeds. The resulting thick juice is poured back into the water in which the berries were boiled.

With white wine and lemon juice

Cloudberry jam with the addition of white wine and lemon juice takes on an unusual taste.

A kilogram of cloudberries is poured with freshly squeezed juice of one lemon and left for 30 minutes so that the berries release juice. Then add 1 glass of dry white wine to the cloudberries, mixed until smooth with 1.3 kilograms of sugar.Place the bowl on the fire and patiently wait for the liquid to boil. Cook the dessert for 25 minutes, remembering to stir constantly.

Cloudberries (1 kilogram) are combined with 1.5 glasses of water and pureed with a blender. The liquid puree mass is poured into the multicooker bowl. Add 1.5 kilograms of sugar and mix everything thoroughly. The multicooker timer is set to 1 hour, “Stewing” mode. The lid is not closed, and the jam is periodically stirred and the resulting thick puna is removed.

Although the multicooker is capable of preparing dishes on its own, you should not leave it alone while preparing jam. The process must be constantly monitored to prevent evaporation of the liquid.
