Red rowan jam - a recipe for making rowan jam for the winter.
Many people unfairly believe that red rowan jam is absolutely inedible. But if you pick the berries correctly—and more specifically, after the first sub-zero temperatures—then the bitterness will go away and the rowan jam will turn out tasty and healthy. Regular consumption of this preparation helps regulate blood pressure and cholesterol levels.
For 1 kg of rowan you need to take 1.5 kg of granulated sugar, 750 ml of filtered water.
How to make delicious red rowan jam.
Red rowan must be placed on a baking sheet and kept in the oven at low temperature for at least 60 minutes, preferably 120.
After this, the berries need to be immersed in very hot water and boiled for 5 minutes.
Next, cook syrup from water and sugar and place red rowan in it for 8 hours. After this period of time has passed, place the pan with the berries in the syrup and boil.
Once the jam starts to boil, remove the container from the heat for 10 minutes, and when the jam has cooled a little, bring it to a boil again. Repeat the described procedure at least 4 times.
After boiling the rowan jam for the last time, leave it on the stove for 10-12 hours so that the berries absorb the sugar better.
Then, the syrup must be boiled separately to the required consistency, the berries must be placed in jars, poured with hot syrup and rolled up.
This rowan jam can be added to tea or compote or used as a filling for baked goods.
