Types of freezing lemons for the winter
Lemons are not the most popular fruit to freeze, since they can be purchased throughout the year and for almost the same price. But, despite this, lemon preparations in the freezer can serve the housewife well and become a table decoration.
Lemon juice
The easiest way to keep citrus fruits fresh for a long time is to freeze their juice. The technology is very simple: you need to wash the fruit, cut it crosswise and squeeze out the juice using a citrus juicer. Then pour into ice cube trays and place in the freezer. You can first dilute the juice with water so that it is less concentrated.

Lemon ice goes well with tea and some other drinks, because in addition to taste, it also cools the drink a little, and can also be used for creams and fruit curds.
Lemon shavings
You can freeze lemons in the form of shavings, but here everything is a little more complicated and you will have to put in a little more effort. To begin with, clean citrus fruits need to be placed in the freezer for 5-6 hours so that they freeze well, then remove and grate the frozen fruit. It’s better to take them out one at a time and rub them quickly so that they don’t have time to melt. Store the finished chips in the freezer in a plastic container. If you do everything quickly, the chips will not have time to defrost or stick together and remain crumbly.

You can also freeze the shavings of not a whole lemon, but just the zest that remains after freezing the lemon juice.

Lemon shavings have a lot of uses, they go well with baked goods, they can be added to dough or cream, decorate the top of a cake, and can be used as spices for salads and meat dishes.
Lemon wedges
Wedges are a classic form of serving lemons; of course, you can freeze them in this form. To do this, you need to wash the lemons and cut them into slices of the desired size, arrange the pieces evenly on a flat plate and put them in the freezer, take them out after a few hours and put them, once frozen, into a container convenient for storage. Lemon slices frozen in this way will not stick together and will decorate the table throughout the winter.
