Vitamin fruit drink from honeysuckle: a recipe for preparing it at home and preparing it for the winter

Some people grow honeysuckle in their garden as an ornamental shrub, but more and more people are learning about the benefits of these berries, and, accordingly, about ways to consume them. Honeysuckle berries are widely used in cooking and folk medicine, and the only question is how to preserve the benefits of these fruits for the winter.

Honeysuckle berries have a sweet and sour taste, with a hint of bitterness. They are pleasant, but eating a lot of them raw is not recommended. There may be side effects such as allergic rashes or stomach upset. Honeysuckle juice is an ideal way to enjoy a delicious drink and treat your body at the same time. It is easy to prepare, since this recipe is no different from preparing fruit juice from any berries.

For 1 glass of honeysuckle berries:

  • 1 liter of water;
  • 100 grams of sugar or honey.

Rinse the honeysuckle berries by placing them in a colander and allowing them to drain slightly.

Mash the berries with a fork or use a blender.

Strain the juice into a separate cup and put it in the refrigerator for now. Fill the honeysuckle cake with water, add sugar, and place the pan on the stove. Bring the water in the pan to a boil and stir to dissolve the sugar faster. There is no need to cook the cake for a long time, and 3-5 minutes after boiling, you can remove the pan from the stove. Strain the honeysuckle decoction through a fine sieve and mix it with the clear juice, and it can be drunk as soon as it has cooled.

To preserve honeysuckle juice for the winter, put the pan back on the stove and bring to a boil. But you shouldn’t boil the fruit drink for more than one minute, otherwise it won’t be a fruit drink, but compote.

Pour hot fruit juice into the jar, immediately close the lid and roll up.

This method of preparing fruit juice is not very good, since the taste of fresh berries disappears. It’s much better to make honeysuckle juice in winter freeze fresh berries, or honeysuckle puree in the freezer, and prepare fruit juice at any time, as needed. Freezing is not as harmful to berries as heat treatment.
