This simple homemade recipe on how to make crispy pickled carrots will become a lifesaver for many housewives. Having such a preparation in the “bottoms” you can quickly set the table when guests unexpectedly arrive. It is also irreplaceable when you need to quickly prepare a winter salad or soup. And although fresh carrots are available at any time of the year, it is worth spending a little of your free time to prepare such a tasty and healthy carrot preparation for the household.
To prepare carrot marinade according to this recipe you need to have:
— water – 9.6 liters;
— vinegar essence – 370 gr.;
or:
– water – 4 liters;
— vinegar -6% — 5 liters.
And:
— salt – 400 g;
– sugar – 500 g;
— laurel leaf – 5 g;
— allspice – 3 g;
— cinnamon – 5 g;
- cloves - 5 gr.
The quantity of products for the marinade is indicated based on 10 liters of filling.
How to pickle carrots at home.
First you need to clean the root vegetable, cutting out the green stuff from the root vegetable.
Next, the prepared carrots need to be immersed in boiling water. The duration of blanching carrots depends on their size. Small root vegetables (diameter from 1 to 2 cm) - boil for 2-3 minutes. And keep larger carrots (diameter from 2.5 to 3 cm) in boiling water for 3-4 minutes. Large root vegetables (over 3.5 cm in diameter) should be boiled for 8-10 minutes.
After blanching, leave the carrots to cool and then chop. Use your imagination when slicing. You can cut the vegetable for this recipe as you like: pieces, stars, circles, sticks, straws, etc.
Place the chopped carrots in jars and fill them with the prepared marinade mixture.
