Apricots

For such jam, apricots should be used that are ripe or even overripe, after sorting out and discarding the damaged ones.

Then rinse the fruit and leave to drain all the water.

After this, the pits are removed, the peeled apricots are crushed (in a meat grinder or blender) and placed in a bowl for making jam.

Now add a small amount of water and start cooking.

Over low heat, stirring regularly, cook the apricot jam in small portions (put enough into the cooking dish to cover the bottom) until fully cooked.

You check readiness like this: if you drop a drop of jam onto the cold surface of the dish, wait a little and see that the drop has not spread and is kept in a heap, then this means that the apricot jam is ready.

While the jam is hot, pack it into warm and dry jars, making sure that they are filled 2 cm below the neck.
