Delicious strawberry jam with whole berries

How to make strawberry jam with whole berries
When starting to cook, first pour half of the sugar prescribed according to the recipe into the bottom of the container for making jam. Then, place the pre-stemmed and washed strawberries in an even layer. Sprinkle the rest of the sugar on top of the berries. We leave our strawberries in a sugar “coat” to infuse for 24 hours.
After a day, we put a bowl of jam on the fire and bring to a boil. Carefully lift the undissolved granulated sugar from the bottom with a spoon, trying not to damage the berries when stirring. After boiling, turn off the jam, collect the foam from it and leave to infuse for a day.
The next day we will boil it again, add lemon juice or citric acid and then boil the mixture to the desired thickness.
To check whether the jam has been boiled down enough, you need to pour a little syrup onto a flat plate, let it cool and, using a spoon, make a groove in the middle of the drop. In ready-made and fairly thick jam, the edges of the grooves should not be connected to each other.
We will not pour the jam hot, but after it has cooled, into a previously prepared clean glass container. This strawberry jam does not need to be sealed with sealing lids. The lemon added to it is a natural preservative and allows us to store our preparation under nylon covers in a cool, dark pantry.
This homemade strawberry jam turns out appetizing, aromatic and tasty, and most importantly, the berries are whole.
