Select ripe, firm tomatoes without visible damage, such as cracks, spots, dents or anything similar. It is best to take the same size, but it is better if it is medium. Remove the stalks by hand, and not with a knife - this will make it possible to preserve the integrity of the fruit. Process overripe and damaged tomatoes into juice, which will be poured over whole fruits.

How to make tomato juice for marinade.

Substandard tomatoes must be cut into quarters, removing all damaged parts.

Place the slices in a large saucepan and fill them with a small amount of water from the kettle. For 1 kg of raw materials, 0.5 cups is enough.

Bring everything to a low boil and cook until the slices soften.

Rub the hot mass through a fine metal sieve and measure the exact volume of the resulting tomato juice.

For each liter of it, add 20 or 30 g of salt and boil again.

While the juice and salt are undergoing repeated heat treatment, prick the prepared whole tomatoes with a wooden skewer or toothpick in five to six places. This is required so that the skin does not crack when the tomatoes are filled with hot juice.

Place the chopped tomatoes in pre-sterilized jars, and then fill them with prepared juice, cooled to a temperature of 80-85°C.

Cover the jars with lids and place them on the bottom of a large pan of hot water. Bring the liquid to a boil and sterilize the canned tomatoes for 20 minutes. This time is enough for 1 liter jars.

At the end of boiling, roll up the jars of tomatoes with their lids, turn them upside down and let them cool naturally.
