Candied quince is prepared in the southern countries - where this amazing fruit grows. They are served with green tea or added to sweet pilaf. It is quite possible to implement this homemade recipe yourself if you buy fresh quince at the market.

How to make candied quince at home.

Quince

Wash 1 kg of ripe large fruits well, using a brush to remove surface fluff.

Cut the fruits into thin slices 1.5–2 cm thick, while cutting out the seed pods.

Even before cutting the quince, boil the syrup. For syrup, take 1 glass of water and 1 kg and 300 g of granulated sugar.

Dip the slices into sweet and hot syrup and shake the basin. This procedure is necessary so that the syrup completely envelops each cut piece. Place the basin with quince on the table, cover it with a clean cotton cloth and leave until the contents cool.

After 12 hours, place the container with quince in syrup on the stove and bring to a boil. Reducing the heat to the minimum possible, cook the mixture for about seven minutes.

Repeat the cooling procedure first, and then again the boiling procedure.

Do this 4 times - the quince slices will become translucent and dense.

Next, place the quince on a wire rack or sieve to drain the syrup.

Transfer the future candied fruits from the sieve onto a sheet and dry them in the sun or in a low-heat oven.

Before storing, sprinkle the dried quince with sugar, which will allow the candied fruits not to stick to each other.
