Usually small onions are not suitable for storage in winter; they dry out quickly. But from such an unsightly and small onion you can make an excellent homemade preparation for the winter - crispy, spicy and very tasty pickled onions.

Proportions for 10 liters of marinade filling:

— water –4.5 liters;

— vinegar (6%) – 5 liters;

- salt - 600 gr.

Spices for pickling:

- star anise (star anise) - 4 grams;

- bay leaf - 10 grams;

– cinnamon – 5 grams;

— red pepper – 4 grams;

— allspice – 5 grams;

- cloves - 5 grams.

How to pickle onions in a jar for the winter in a delicious way.

Small onions

For our homemade preparations, it is better to choose small-sized onions. Selected bulbs must be freed from peel and remaining roots. There is one small home secret on how to “undress” the bulbs faster. Before starting cleaning, our onion must first be dipped in boiling water for 2 - 3 minutes, then quickly doused with cold water.

The onions peeled in this way must be placed in a water-salt solution (water - 10 liters, salt 200-300 grams) before marinating (while you cook the marinade).

When the marinade is ready, place the onions in jars, fill them with hot marinade, roll them up and remove them for soaking and cold storage.

This onion preparation will be perfectly preserved until the new season, and you will have an original and tasty addition to all kinds of winter salads.In addition, I serve pickled onions as an addition and a pickled appetizer to the first and second courses.
