Delicious carrot “cheese” is an original preparation made from carrots with lemon and spices.
Homemade carrot “cheese” with lemon and other spices can be prepared in a year when the harvest for sweet and bright root vegetables is especially good and the carrots have grown juicy, sweet and large. This carrot preparation is prepared by boiling the carrot mass and then adding spices.
How to make this original carrot preparation for the winter?
Take large root vegetables, peel off the top layer and cut into pieces.
Place 1 kg of prepared carrots in a cauldron for pilaf and pour in 50-70 ml of water so that the mass does not burn when boiling.
Cook on the lowest power until the pieces are completely softened.
Then, crush them with a wooden pestle and boil until thick.
To the carrot puree, add 1 lemon, grated along with the peel, and spicy seeds of your choice: dill, cumin, anise, coriander - only 1 tsp.
Cool the mixture slowly to a temperature where you can handle it with your hands. Form small rectangular pieces, shaped like soap, and wrap them in cheesecloth.
Place the bricks on a cutting board, cover with a second board and set the pressure. After three to four days, when the cheese has dried and thickened, release the pieces from the gauze and roll in the same seeds that were used earlier, or in bran (wheat, rye, oat).
Store delicious carrot “cheese” in a place where there is no moisture and direct access to light.
Such carrot preparations are recommended for everyone, but they are especially useful for people with certain stomach problems, because they are an excellent dietary product.
