I make this simple and tasty salad of green tomatoes with eggplant, onions and garlic every year for the winter, when it becomes clear that the tomatoes will no longer ripen. Such preparation will not allow a healthy product to go to waste, which cannot be eaten raw, but would be a pity to throw away.

A simple recipe will appeal to every housewife who every fall “dries her head” over what to do with unripe tomatoes. This green tomato salad is good both as a separate dish and as an additional side dish. See for yourself using my step-by-step recipe with photos.

To prepare the workpiece we will need:

  • 1.5 kg green tomatoes;
  • 3 kg eggplant;
  • 2 kg of onion;
  • 1 kg carrots;
  • 150 grams of vinegar;
  • 4 tbsp. spoons of sugar;
  • 2 tbsp. spoons of salt;
  • red tomatoes 1 kg;
  • garlic - 3 large heads;
  • sweet pepper - 0.5 kg;
  • vegetable oil.

How to prepare a salad with green tomatoes for the winter

The initial stage of preparation begins as standard: wash and peel all the vegetables. Blue and green tomatoes must be peeled.

Place the peeled eggplants in lightly salted water and leave to soak for 4 hours.

Then, all the ingredients must be finely chopped and the carrots grated on a coarse grater.

We will fry the prepared vegetables separately until golden brown. Fry green tomatoes and sweet peppers together. It will turn out to be such a liquid mixture, but it’s very good. Liquid will be needed to prevent the salad stew from burning.

Mix all ingredients in a large container, and add sugar, salt, pepper, garlic and vinegar.

Grate ripe tomatoes and add to the rest of the vegetables. Boil for another 10-15 minutes.

Then, put the green tomato salad into half liter jars and put sterilize into a large container. It is necessary to sterilize in such a way that the water covers 70% of the height of the jar. The time for such sterilization is 40 minutes from the moment of boiling.
