There are many recipes for making dried chicken breast at home. Taking one of them as a basis and showing a little imagination, I developed my own original recipe for making dried chicken, or rather, its fillet.

The individuality and originality of my recipe is that before drying, I marinate the chicken meat in wine with the addition of various spices. Spicy herbs impart their unique aroma to the meat, and the wine gives a light, pleasant sourness.

Required ingredients:

  • chicken breasts (only sirloin without skin and bones) – 3 pcs.;
  • dry white or rose wine – 200 ml;
  • salt – 2 tbsp. false;

We take 0.5 tbsp of dried and ground spices from each. false:

  • basil;
  • chilli;
  • dried tomato powder
  • black pepper;
  • paprika;
  • dill;
  • cumin;
  • thyme.

First, we need to rinse the chicken breast fillets and dry them with paper napkins.

Next, we mix spices and salt. I would like to note that I selected the spices according to my preferences; if you don’t like any of the herbs, you can replace them to your liking.

Then, we need to generously rub the pieces of meat with a mixture of salt and spices and place them in a bowl for marinating.Use only half of the spice mixture.

How to make jerk chicken at home

Pour dry wine from pink or white grapes over the laid chicken breasts in spices. It is better not to use dark red wine; it will not spoil the taste of the meat, but the breasts will turn a burgundy color that is not aesthetically pleasing.

Next, put the marinated meat in the refrigerator for 36 hours. During this time, you need to turn the chicken breasts three times. We do this so that the meat marinates evenly.

After 24 hours, the marinade must be drained, and the meat must be thoroughly washed to remove any remaining wine and spices and dried with paper towels.

Now, rub our chicken breasts again with the spicy mixture, wrap them in cling film and put them in the refrigerator for another 36 hours.

Next, we wash off the spices and salt from the meat, blot it dry again with paper napkins and hang it out to dry in a cool, dry place for 24–48 hours.
