This recipe for preparing tomatoes for the winter is not quite ordinary, since in our country it is more customary to pickle or salt tomatoes, make tomato sauces, but not dry them or dry them. But those who have at least once tried sun-dried tomatoes are sure to prepare at least a couple of jars for the winter every year.

I’ll tell you how to prepare delicious sun-dried tomatoes in oil with Italian herbs for the winter in my recipe with step-by-step photos.

For the preparation we will need:

  • tomatoes;
  • vegetable or olive oil;
  • salt;
  • Italian herbs.

How to make sun-dried tomatoes in oil for the winter

First, we need to prepare the most important ingredient - tomatoes. You should not take tomatoes that are too large; the smaller they are, the less you will have to cut them. In principle, any variety of tomatoes is suitable for this recipe, the main thing is that they are as meaty as possible.

Tomatoes need to be washed, cut out all spoiled areas, stems and cut into small slices.

Do not cut too finely as our sun-dried tomatoes will dry out. But if you cut it very large, it will greatly increase the drying time.

All our slices need to be spread evenly, in one layer, on a baking sheet or wire rack. Sprinkle a little salt on top.

Now put the tomatoes in the oven at low temperature.

Why do I speak weakly? Because all ovens are different. In mine, the low temperature is 140 degrees.In many electric ones you can set it to at least 50. On average, the temperature should be somewhere around 90-100 degrees. We put our future sun-dried tomatoes in the oven for about 5 hours. Everything will again depend on your oven.

Be sure to check your tomatoes periodically. This way, you won’t miss the right moment and release the steam from the oven. The tomatoes should not turn out too dry. Don't overexpose them. As a result of drying, they should look like in the photo.

As soon as our sun-dried tomatoes are ready, you can immediately start putting them in the jar. Be sure to use a clean jar and lid. Pour a tablespoon of oil into the bottom of the jar and sprinkle some Italian herbs, tightly lay a layer of tomatoes.

On top there is again butter and Italian herbs and again dense tomatoes. Continue filling this way until the entire jar is full.

Now, close the jar with a clean lid and place it in a cool place to cool.
