Carp is one of the most common river fish. A lot of it is always caught, therefore, the acute question arises - how to preserve the catch? I offer a classic recipe for dried carp, absolutely light and easy to prepare. Nothing compares to catching fish with your own hands (after all, your husband’s hands are practically your hands and, accordingly, vice versa) and cooked fish.

Carp

Remove the scales, head, tail and entrails, and wash each fish well. We send the fish to salt for 10 days. How to pickle? In this case, you can safely use “dry" and "wet"by salting method.

Then, you need to rinse and coat the fish a little with salt mixed with saltpeter (you can replace it with aspirin), which we take in an amount of 2% by weight of salt.

We dry it for 2-3 weeks and the fish is ready.

The finished dried carp is sent for storage in boxes with holes on both sides. This is required so that the fish is ventilated and stored longer. You can also put sticks or wood chips between the fish, this also helps to ventilate them.

Delicious dried carp is good dry with beer or kvass. If you store this fish correctly, it can be stored for as long as 12 months.
