How to make quince jam in slices
Wash the fruits thoroughly, removing all fluff from the surface during the washing process.
Place a teaspoon of citric acid in a glass saucepan and pour in some water.
Cut the quince into narrow slices and use a knife to clean out the middle with the seeds. Do not remove the peel from the fruit so that the slices remain intact during the cooking process.
Place the chopped quince pieces in a pan of water and bring to a boil.
Pour out the water and sprinkle the slices with sugar so that they release the juice.
After 10-12 hours, place the pan on the stove and bring to a boil for the first time. If the quince has released little juice, you can add a little water. After 12-24 hours, repeat heating the jam to 100 degrees. For the third time, let the jam simmer for 5 minutes. As a result of this cooking, the quince pieces will become candied, and the jam itself will acquire a beautiful dark amber color.
