Lovers of sweet and sour flavors should definitely try cloudberry jam. This is a northern berry, which locals dubbed the “Royal berry” because in the distant past, cloudberries were invariably supplied to the royal table.

Cloudberry berries are somewhat similar to raspberries and their fresh transportation over long distances is impossible, but in the form of jam or jam, cloudberries can be stored for a very long time.

Ripe cloudberries are bright yellow, even orange, and the jam made from such cloudberries is amber-transparent.

Jam is prepared with seeds or without seeds. In principle, this is a matter of taste. After all, the seeds in cloudberries are small, a little larger than in raspberries or strawberries. But without seeds, of course, the jam turns out more tender.

For 1 kg of ripe cloudberries you need:

  • 700 g sugar;
  • 2 limes or lemons.

To make cloudberry jam, you need to wash and sort the berries.

Then, you need to chop the berries by grinding them through a sieve if you want jam without seeds, or with a blender if the seeds don’t bother you.

Grate the zest from the lemon and squeeze out the juice.

All this should be added to the cloudberry puree along with sugar, and put the pan on low heat.

Bring the jam to a boil and reduce heat. The jam should barely simmer.

Stir it so that the berries do not burn.

Cook the jam until it thickens.With this amount of ingredients it will take about 40 minutes.

Place the finished jam in glass jars and roll up. Cloudberry jam will delight you for at least 18 months and it does not require special storage conditions. You can leave it in the kitchen cabinet and it won't spoil.
