Frozen baked peppers for the winter for salad or soup
When the pepper season comes, you start to grab your head: “What to do with this stuff?!” The easiest way to prepare is frozen baked peppers.
Fresh, freshly cut fruits are best suited for this preparation. They are juicy and later, after baking, the skin on such pods can be easily removed. In my recipe I share my experience on how to properly bake and freeze baked peppers for the winter. A detailed recipe and step-by-step photos will help you quickly and easily master the preparation of the product.
How to Freeze Roasted Peppers
First, let's wash the peppers. There is no need to trim the stalk and clear them of seeds.
Grease the bottom of the baking sheet with a thin layer of vegetable oil and place the green beauties on it.
Place the pan in the preheated oven for about 30 - 40 minutes. You need to bake at a temperature of 220 degrees. As they cook, the skins on the pods will begin to make a crackling sound as they fry. Some peppers may even burst. About 25 minutes after the start of baking, the peppers need to be turned over to the other side.
After the peppers are baked, take them out and immediately transfer them to the pan.
Close it with a lid for at least 15 minutes. This must be done so that the skin from the baked pods can be removed perfectly.
The next step is to peel the vegetables, remove their stems and seeds.
To do this, take the pod by the stalk and remove the “skin” with movements from top to bottom. Next, it’s convenient to open the pepper lengthwise and take out the stalk itself and all the seeds. Peppers, when baked, give a lot of juice, so it is better to cut the baked peppers over a container in which you put the peppers, cleaned of all excess. The extracted juice is very tasty and should not be thrown away.
We cut the peeled peppers into strips or cubes, but you can leave the peppers whole.
The choice depends on how you plan to use them in the future. For soups and salads, it is convenient to cut crosswise into strips 1.5-2 centimeters wide.
We put our cuts into packaging bags, fill them with the juice released during baking and put them in the freezer.
