Dressing for pickle sauce with barley - a classic recipe for preparing for the winter
There are days when there is absolutely no time to cook, but you need to feed your family. In such situations, various soup preparations come to the rescue. I would like to bring to your attention a step-by-step photo recipe for preparing pickle with barley and pickles.

The dressing for the soup is easy to prepare, and pickle can be prepared from it very quickly in winter and the soup turns out very tasty.
How to prepare pickle sauce for the winter
First of all, let's deal with the cereal.
We will need 250 grams of pearl barley. A mandatory step is soaking the cereal in cold water for several hours in advance. If I plan to make the preparation in the evening, then I fill the grains with water in the morning. The photo below shows what pearl barley looks like before and after soaking.
After the pearl barley swells with water, we rinse it again.
Place in a saucepan, add 500 milliliters of cold water and place on medium heat for 15 minutes.
At the same time, we do not have the goal of boiling the pearl barley completely; we just need to ensure that the liquid evaporates. See the photo for how it should look at this stage of preparation.
In the meantime, let's take care of the vegetables. Peel carrots (200 grams) and grate them on a coarse grater, cut onions (200 grams) into cubes.
Pour 100 milliliters of vegetable oil into a large frying pan and fry the onions and carrots in it.
While the vegetables are fried, grate 600 grams of pickled cucumbers through a coarse grater.
If you don’t like grated cucumbers, cut them into small cubes.
The next step is to add chopped cucumber and 3 tablespoons of thick tomato paste to the carrots and onions.
Mix everything and simmer under the lid for 5 minutes.
Now, add ready-made pearl barley.
Add salt and pepper to taste. Fill the contents with hot boiled water so that the liquid completely covers the food.
The amount of water is not regulated, use your eye. Simmer the pickle over low heat for 7 minutes, remembering to stir occasionally.
All that remains is to place the boiling preparation into sterile jars and screw on the lids. The pickle sauce does not require additional sterilization. Turn the jars over and leave them to cool under a warm towel. They are stored in a cool place with all other preparations.
