How to freeze green peas for the winter
Let's select green, not overripe pea pods. It is important to start the processing process as quickly as possible so that as many vitamins as possible are preserved.
I used two varieties of peas for freezing; it is clear that one of them is greener, “brainy”. The taste when frozen is not affected by which variety you use.
We wash the pods under running water.
We clean the peas out of them. We make sure that our future freezing does not include wormy or rot-damaged specimens.
The next step is to blanch the peas in order to stop the oxidation process of the enzymes contained in them.
Oxidized enzymes when frozen can give green peas an unpleasant taste. To blanch, boil water in a saucepan. Place the cleaned grains in boiling water for 3 minutes.
At this time, prepare another pan with very cold water.It is advisable to put ice in the water so that it is as cold as possible.
After 3 minutes, drain the peas into a colander and immediately lower them into ice water.
It is very important to carry out this manipulation as quickly as possible - the vitamins and freshness of the peas will be preserved much better.
Next, dry the grains. It is convenient to use a paper towel for this. Place the peas in a freezer container.
