There are many recipes for making “blue” ones. But this eggplant preparation captivates with the availability of ingredients and piquant taste. It does not require sterilization and is suitable even for those who for the first time decided to prepare a snack from the “little blue ones” for the winter.

How to cook fried eggplants for the winter.

Eggplant

You will need 1 kilogram of young fresh fruits. Cut them into slices and soak for an hour in salted water.

Place the eggplant patches on a paper napkin to remove excess liquid.

Then fry in sunflower oil until golden brown. Oil is needed in sufficient quantity - at least 100-150 ml, so that the eggplants float in it.

Peel three lemons and cut them into circles, removing the seeds.

Chop the spicy herbs – cilantro, parsley, basil.

All you have to do is place all the ingredients in layers in a glass jar: first, eggplant slices, salt to taste, then lemon and herbs, again fried eggplants - and so on until the top.

Fill everything with vegetable oil, cover the jar with parchment or a plastic lid.

No need to sterilize.

Store the blueberry preparation in the refrigerator or basement suitable for temperature conditions.
