Fried zucchini with garlic in a spicy marinade for the winter

So let's seal a couple of jars of fried zucchini in a spicy marinade for the winter, while there are a lot of young vegetables on the shelves. I offer my recipe for fried zucchini, and step-by-step photos will illustrate the preparation.
Ingredients for 2 liter jars:
4 medium young zucchini.
For the marinade:
- vegetable oil - 1 cup;
- water - 2 glasses;
- vinegar 6% or apple cider vinegar - 80 milliliters;
- garlic - 6 cloves;
- chili pepper - to taste;
- Italian herbs - to taste;
- salt - 2 teaspoons;
- sugar - 3 teaspoons.
How to cook fried zucchini for the winter
The first thing we need to do to get started is prepare the zucchini. They need to be washed and cut into circles approximately 1 cm thick.
Place them on a baking sheet or in a bowl and sprinkle with vegetable oil, mix gently but well.
We do this so as not to pour oil into the pan during frying. Now you need to fry all the zucchini. It will be more beautiful if grilled in a frying pan, but this is not necessary.
Place the fried pieces in a bowl.
Now, you need to cook the marinade.To do this, mix all the ingredients in a saucepan. Finely chop the garlic. Chili pepper can be either fresh, in which case it needs to be finely chopped, or as a spice, only flakes. Bring the marinade to a boil over low heat.
IN clean Pack the jar tightly with layers of zucchini and fill it with hot marinade.
Do not roll up fried zucchini with garlic in a spicy marinade right away, wait until the marinade settles completely, you may have to add more. The zucchini should be completely covered in the spicy marinade.
