How to make birch kvass
Method one.
To do this, pour into a container Birch juice, add dried apples and lemon balm sprigs to it.
Whole barley grains need to be fried until golden brown, cooled and placed in a container with birch sap.
Attention: When you fry barley, do not overcook it, otherwise the kvass will be bitter.
Now, the container needs to be taken out into the cold so that the birch kvass can infuse for several days.
If it is not intended to be used immediately, this kvass can be stored in the same container for quite a long time and will retain all the beneficial properties of birch sap.

Golden birch kvass can be prepared and the second way.
In this recipe, raisins will add sourness to kvass instead of dried apples.
Fry half a kilo of selected barley until golden brown, cool and add up to 20 liters of fresh birch sap into a glass bottle. We also add a good amount of washed raisins.Now we close the bottle with a lid and take it to the cellar.
Kvass will be ready in 10 days, but in a dark, cool cellar it can be stored for about six months.
